my advice is to start with a simple box. this is also good practice for making the process seem easy.
make a box. scale it up by "2s" (i.e. 128, 256, 512, 1024, 2048, etc).
at each step, go through the process of exporting to UED and see how it looks placed next to a Character.
you can definately, easily change the scale of a mesh in UED (although it isnt as easy in TV as it is in other games cuz they removed some stuff... god know's why).
but while you can change the scale in ued if the mesh is way too small, id suggest taking the time up front to try to get a box in maya to export to be roughly "player side" in ued so that you can make stuff in there naturally.
